  8. 1 raja canela
  9. 10 hojas laurel lo que haga un puñito
  10. 4 ramitas tomillo
  11. 1 poco masa solo para que espese
  12. c/n Agua
  13. 10 cucaradas de Achiote
  14. c/n Aceite
  15. al gusto Sal

  1. En una olla grande con lo suficiente de agua más o menos un poco arriba de la mitad. Agrega todos los chiles desvenados y sin semilla, el tomate, tomillo laurel.
  2. Lleva al fuego.. deja que hierva y todo se mire bien cocido el agua se tornara de un color café... saca del fuego y deja enfriar..
  3. Ahora el ajonjolí, pepitoria y canela en un sartén con suficiente espacio doramos a fuego lento moviendo siempre con una paleta cuidando que no se queme deja enfriar...
  4. Es mejor hacer toda la cocciòn un día antes para el siguiente ya este lo suficiente frío..
  5. Luego le quitamos un poco de caldo unas 3 a 4 tazas. a los ingredientes ya cocidos reservamos, sacale el tomillo y laurel para que no amarge..
  6. El ajonjolí, pepitoria y canela se ponen aparte.. ya listo todo llevalo a moler y que no quede entero.
  7. Seguimos con todo ya molido tiene que quedar espeso y como a mi no me gusta que quede con posol. Lo paso por un colador agregando el caldo que se reservo.. hasta que queda bien fino sin grumos.
  8. Ya colado el recado deja reposar mientrAs seguimos con el aceite y el achiote en un cazo pequeño agrega unas 5 a 6 cucharadas de aceite con 8 cucharadas de achiote granulado cocina a fuego medio hasta que suelte el color.. y deja enfriar.
  9. Volvemos al recado... en una olla grande, poner a fuego medio añadiendo y colar el aceite ya colorido de achiote. Agrega sal algusto cuidando que no quede muy salado.es mejor que le falte un poco y no que se sale.
  10. Mover siempre con una paleta grande por nada te apartes de la olla sin dejar de mover porque se pega o se quema. Si sientes que esta muy espeso agrega otro poco de agua desde que empieza a hervir toma tiempo de 10 a 15 min apaga y listo. L
